Fermented foods<\/strong> are a great resource for our well-being. From the more familiar, such as yogurt, to the more exotic, such as kimchi and natto, there really is something for every palate, so much so that incorporating them into the daily diet should be rather simple.<\/p>\n<p>We offer some of them.<\/p>\n<h3>Yogurt<\/h3>\n<p><img fetchpriority=\"high\" fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-17892\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1568852824.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>Product of the <strong>fermentation of milk<\/strong> by the action of <strong>lactic acid bacteria<\/strong>. It is a food rich in nutrients, such as calcium, potassium, phosphorus and B vitamins. Several studies have produced data linking yogurt consumption with <strong>probiotics <\/strong>(i.e., &#8220;good&#8221; bacteria that reach the gut alive) to lower <strong>blood pressure<\/strong>, body <strong>weight <\/strong>maintenance and fat loss, <strong>bone<\/strong> health, and lower incidence of<strong> type 2 diabetes<\/strong>. An alternative to try is Icelandic <strong>skyr <\/strong>, which is made from heated skim milk, then live cultures are added; finally it is strained to remove the whey. Compared to classic yogurt it has a thicker consistency, but for a portion of the same size it is also richer in nutrients.<\/p>\n<h3>Sauerkraut<\/h3>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-17894\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1293272104.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>This is one of the most popular fermented preparations in the world. It is low in calories but is rich in fiber, vitamin C and K, and <strong>antioxidants<\/strong>. The greatest health benefits come from preparations that have not undergone the pasteurization process (which kills the bacteria).<\/p>\n<h3>Kefir<\/h3>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-17880\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_684766561.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>It is an effervescent, sour-tasting beverage that is made from the <strong>fermentation of milk<\/strong> by <strong>kefir granules<\/strong>, which are mixtures of <strong>bacteria and <\/strong> <strong>yeasts <\/strong>that live in symbiosis. The nutritional composition of kefir, and also its organoleptic characteristics vary according to the type of milk used (more or less fat), the microbiological composition of the kefir granules and the granule-milk ratio, the time (18 to 24 hours) and temperature of fermentation (between 18 and 30\u00b0C), and the storage conditions. In contrast to yogurt and skyr, it is <strong>suitable for <\/strong>those with<strong>lactose intolerance<\/strong>, and its consumption has been associated with reduced incidence of <strong>type 2 diabetes<\/strong>, <strong>cardiovascular<\/strong> and <strong>neurological<\/strong> disorders, and <strong>intestinal inflammation<\/strong>.<\/p>\n<h3>Kimchi<\/h3>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17882\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1755822044.jpg\" alt=\"\" width=\"1000\" height=\"625\"><\/p>\n<p><strong>Vegetables<\/strong>, especially cabbage, which is<strong>fermented and <\/strong> <strong>flavored with various spices<\/strong>. Its introduction into diets is quite studied as it appears to bring considerable health benefits, in particular it can reduce <strong>insulin resistance <\/strong>(preventing diabetes) and <strong>cholesterol<\/strong> levels.<\/p>\n<h3>Kombucha<\/h3>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17884\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1676949397.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>It is a <strong>fermented<\/strong>, effervescent <strong>tea <\/strong>(black or green). Although more testing is needed in humans, preliminary studies have shown that this beverage can help protect the <strong>liver <\/strong>from harmful chemicals, decrease <strong>blood pressure<\/strong>, <strong>triglyceride and <\/strong>LDL <strong>cholesterol <\/strong>levels.<\/p>\n<h3>Miso<\/h3>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17886\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1785054014.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>It is a food product made by <strong>fermenting soybeans <\/strong>and salt. It is a kind of very flavorful paste that is used in the preparation of various oriental dishes, such as soups. It is associated with <strong>heart health<\/strong> benefits and decreased incidence of certain <strong>cancers<\/strong>.<\/p>\n<h3>Natto<\/h3>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17888\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_1005751471.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>They are <strong>fermented soy beans<\/strong>. Fermentation takes place by special bacteria<em>(Bacillus subtilis<\/em>), and the process gives this food a viscous texture and a strong, pungent smell and taste (the Japanese eat it along with the ever-present rice even for breakfast, but in the West not everyone might appreciate it). It is attributed with <strong>immune-stimulating <\/strong>properties and has a high vitamin K content, which is important for blood clotting and in calcium metabolism.<\/p>\n<h3>Tempeh<\/h3>\n<p><img loading=\"lazy\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17890\" src=\"https:\/\/solongevity.com\/wp-content\/uploads\/2022\/11\/shutterstock_2114503691.jpg\" alt=\"\" width=\"1000\" height=\"667\"><\/p>\n<p>Food produced by<strong> fermenting soybeans with a fungus <\/strong><em>(Rhizopus)<\/em><strong>,<\/strong>along with other bacteria and yeasts. Its texture may vary depending on production conditions, but it has nutritional properties that make it a viable and potentially beneficial alternative to meat.
